Ingredients

  • 500 g basmati rice
  • 2 tbsp extra-virgin olive oil
  • 1 tsp whole coriander seeds
  • 2 bay leaves
  • ¼ onion, finely chopped
  • 1 garlic clove
  • Salt and black pepper
  • 4-5 green cardamom pods


Instructions

  1. Rinse the rice thoroughly: wash under cold running water until it runs completely clear. Rub the grains gently to remove excess starch.
  2. Sauté the onion: heat the olive oil in a heavy-bottomed pot and cook the onions until translucent.
  3. Add aromatics: stir in the spices, bay leaves, and crushed garlic. (Frozen peas can also be added for color and sweetness.)
  4. Add the drained rice: stir lightly so the grains absorb the aromatics; season with salt and pepper.
  5. Measure the water precisely: pour just enough to cover the rice by 5 mm, no more. Do not stir afterward.
  6. Seal the steam: cover the pot with a tight layer of foil, then place the lid on top to trap moisture.
  7. Cook until steam disappears: once you no longer see steam escaping, remove the pot from the heat.
  8. Fluff the rice: gently loosen the grains with a fork to aerate them.
