- 500 g basmati rice
- 2 tbsp extra-virgin olive oil
- 1 tsp whole coriander seeds
- 2 bay leaves
- ¼ onion, finely chopped
- 1 garlic clove
- Salt and black pepper
- 4-5 green cardamom pods
Instructions
- Rinse the rice thoroughly: wash under cold running water until it runs completely clear. Rub the grains gently to remove excess starch.
- Sauté the onion: heat the olive oil in a heavy-bottomed pot and cook the onions until translucent.
- Add aromatics: stir in the spices, bay leaves, and crushed garlic. (Frozen peas can also be added for color and sweetness.)
- Add the drained rice: stir lightly so the grains absorb the aromatics; season with salt and pepper.
- Measure the water precisely: pour just enough to cover the rice by 5 mm, no more. Do not stir afterward.
- Seal the steam: cover the pot with a tight layer of foil, then place the lid on top to trap moisture.
- Cook until steam disappears: once you no longer see steam escaping, remove the pot from the heat.
- Fluff the rice: gently loosen the grains with a fork to aerate them.
