This zucchini flan is light, flavorful, and incredibly simple to make.
With just a few fresh ingredients and minimal prep, you’ll have a delicious dish that works as an appetiser, a side, or even a light main course.

- 1 large zucchini (or 2 medium)
- 1 onion
- 4 eggs
- 4 tbsp heavy cream
- Chives (dried or fresh)
- Salt and black pepper
- 1 tsp olive oil
Instructions
- Preheat the oven to 180°C (350°F).
- Wash the zucchini and cut it into rounds, then into quarters.
- Slice the onion and sweat it in a little olive oil in a hot pan.
- Add the zucchini slices and cook for about 10 minutes over low heat.
- In a mixing bowl, beat the eggs and add the heavy cream, salt, pepper, and chopped chives. Mix well.
- Place the zucchini and onion mixture into small ramekins and pour the egg mixture on top.
- Bake for about 15 minutes, keeping an eye on the cooking.
