Description

This zucchini flan is light, flavorful, and incredibly simple to make.

With just a few fresh ingredients and minimal prep, you’ll have a delicious dish that works as an appetiser, a side, or even a light main course.


Ingredients

Scale
  • 1 large zucchini (or 2 medium)
  • 1 onion
  • 4 eggs
  • 4 tbsp heavy cream
  • Chives (dried or fresh)
  • Salt and black pepper
  • 1 tsp olive oil


Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Wash the zucchini and cut it into rounds, then into quarters.
  3. Slice the onion and sweat it in a little olive oil in a hot pan.
  4. Add the zucchini slices and cook for about 10 minutes over low heat.
  5. In a mixing bowl, beat the eggs and add the heavy cream, salt, pepper, and chopped chives. Mix well.
  6. Place the zucchini and onion mixture into small ramekins and pour the egg mixture on top.
  7. Bake for about 15 minutes, keeping an eye on the cooking.
