Description
A simple vanilla cake that’s easy to make, with a very soft, light crumb. It melts in the mouth, stays tender even the next day, and uses basic pantry ingredients.

- 225 g self-raising flour (otherwise add 1/2 tsp baking powder)
- 220 g sugar
- 125 g melted butter
- 125 ml milk
- 2 eggs
- 2 tbsp vanilla extract
- 1/2 tsp baking powder (if you don’t have self-raising flour)
Instructions
- Preheat the oven to 160°C.
- In a mixing bowl, lightly whisk the eggs and sugar.
- Add the melted, cooled butter, the vanilla, and the milk.
- Add the flour with the baking powder and mix until you get a smooth batter.
- Pour the batter into a greased or parchment-lined 20 cm pan and bake for about 55 minutes.
- Let it cool slightly before unmoulding.
