For the Salad:
- Fresh salad greens e.g., mixed greens, spinach, or arugula
- Fresh strawberries hulled and sliced
- A handful of blueberries optional
- ½ block of feta cheese crumbled
- A handful of pecans roughly chopped
For the Strawberry Vinaigrette:
- 5 –6 whole strawberries
- ¼ cup feta cheese
- ¼ cup pecans
- ¼ cup olive oil
- 1 tablespoon apple cider vinegar
- 2 tablespoons sugar
- ½ teaspoon dried basil
- ¼ teaspoon salt
Instructions
Preparing the Salad:
- Wash and dry the salad greens. Tear into bite-sized pieces if necessary.
- Place the greens in a large serving bowl.
- Wash the strawberries, remove the stems, and slice them.
- Add the sliced strawberries and blueberries (if using) to the greens.
- Sprinkle the crumbled feta cheese over the salad.
- Top with the chopped pecans.
Preparing the Vinaigrette:
- In a blender, combine the strawberries, feta cheese, pecans, sugar, dried basil, and apple cider vinegar.
- Blend until smooth.
- While blending, slowly drizzle in the olive oil to emulsify the dressing.
- Taste and add salt as needed. Blend briefly to combine.
Assembling the Salad:
- Drizzle the desired amount of strawberry vinaigrette over the salad.
- Toss gently to combine and serve immediately.
