Description

These almond and lime energy balls are a healthy, quick, and no-bake snack. Packed with fiber and natural energy, they’re perfect for snacking, post-workout fuel, or a wholesome treat


Ingredients

Scale
  • 1 glass almonds
  • 1 glass pitted dried dates
  • 1/2 glass unsweetened shredded coconut
  • 1 lime, zested and juiced – Use 1 tbsp of zest and 1 tbsp + 1 tsp of lime juice


Instructions

  1. Add the almonds, dates, shredded coconut, lime zest, and juice to a food processor.

  2. Blend on high speed until the mixture becomes crumbly and sticky.

  3. Pause to scrape down the sides if needed to ensure even mixing.

  4. Scoop out a tablespoon of the mixture and press it between your fingers:

    • If it holds together well, roll into 1-inch balls.

    • If it’s too dry, add a splash of lime juice or water and blend again.

  5. Roll into balls (about 20 total).

  6. Enjoy immediately or store in an airtight container.
