Ingredients

  • 180 ml (¾ cup) heavy cream
  • Zest of 2 limes
  • 395 g (14 oz) white chocolate, chopped
  • 1 tablespoon fresh lime juice
  • 28 g (2 tbsp) unsalted butter, in pieces
  • Shredded coconut
  • Additional lime zest for garnish


Instructions

  1. Heat the cream with the lime zest just until it begins to simmer. Remove from the heat and let steep for 30 minutes so the citrus flavor fully develops.
  2. Strain the warm cream over the chopped white chocolate. Add butter and lime juice, then gently stir in small circular motions until smooth. Avoid stirring aggressively to keep the ganache silky.
  3. Press plastic wrap directly onto the surface, let sit 1 hour at room temperature, then refrigerate 5-6 hours. Proper chilling ensures the truffles will hold their shape.
  4. Scoop small amounts of ganache and roll quickly between your hands to form smooth balls. Keep a towel nearby to wipe your hands, it makes shaping easier.
  5. Roll the truffles in shredded coconut and finish with a touch of lime zest. Serve immediately or refrigerate.
