These date and almond energy balls are the ultimate healthy snack, bursting with flavor and packed with energy.


Ingredients

  • 400 g Pitted dates
  • 200 g Ground almonds
  • 2 tbsp Peanut butter
  • 4 tbsp Cocoa powder
  • 2 tbsp Coconut oil


Instructions

  1. Pit the Dates : If your dates aren’t already pitted, remove the pits first.

  2. Soften for Easy Blending : To make blending easier, soak the dates in hot water for a few minutes. This will soften them, creating a smoother texture. Be sure to dry them thoroughly before using.

  3. Place the dates in a food processor and blend until you achieve a smooth, sticky dough. If you don’t have a food processor, an immersion blender works as well, though it might take a bit more effort.

  4. Add the ground almonds and cocoa powder to the date paste. Blend until the ingredients are fully combined, forming a consistent dough.

  5. Incorporate Peanut Butter and Coconut Oil : Pour in the peanut butter and melted coconut oil. Blend again until the mixture becomes smooth and uniform. The peanut butter adds a creamy texture and rich flavour, while the coconut oil imparts a subtle freshness.

  6. Using a spoon, scoop small portions of the dough and roll them between your hands to form bite-sized balls.

  7. Arrange the energy balls on a prepared baking sheet. They’re ready to enjoy or store for later!
