Description

This banana jam with lime blends sweetness and tang in a silky texture. Simple to make, it adds an exotic touch to toast, crêpes, or homemade pastries.


Ingredients

Scale
  • 1000 g ripe bananas, peeled 

  • 280 g white sugar

  • 280 g brown sugar

  • Juice of 3 limes

  • Cinnamon


Instructions

  1. Slice the bananas into rounds and place them in a large mixing bowl.

  2. Add both sugars, the cinnamon stick, and the lime juice, then mix thoroughly to coat the fruit evenly.

  3. Transfer the mixture to a large saucepan and let it rest for 1 hour, or move straight to cooking if you prefer.

  4. Bring to a boil over high heat, then reduce to low and simmer gently.

  5. Keep an eye on the cooking time – it should not exceed 30 minutes.

  6. Test for setting by placing a few drops of jam on a very cold spoon: if it runs, cook a little longer and repeat the test.

  7. Pour the hot jam into sterilized jars immediately.

  8. Seal tightly and turn the jars upside down to create a vacuum seal.

  9. Allow to cool completely, then store in a cool, dry, dark place.

  10. Once opened, refrigerate and consume within 2–3 weeks.
