- 2 tsp Dijon mustard
- 1 tbsp lemon juice (or apple cider vinegar)
- 2 tbsp extra virgin olive oil (or neutral oil)
- 1 tsp honey (to taste)
- 1/4 tsp salt (then adjust)
- 2 tbsp chopped parsley (or coriander/chives)
- 1 garlic clove, finely grated or pressed
Instructions
- Grate the carrots: Use a food processor, rotative grater or a coarse grater.
- In a large bowl, whisk together Dijon mustard, lemon juice, honey, olive oil, and salt until smooth and slightly creamy.
- Add the grated carrots, parsley, and grated garlic to the bowl.
- Stir for 30-40 seconds so every strand is evenly coated.
- Cover and refrigerate for 20-30 minutes so the flavours meld.
