  • 220 g (1 ¾ cups) all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground ginger
  • ¾ teaspoon salt
  • 2 large eggs, at room temperature
  • 100 g (½ cup) granulated sugar
  • 150 g (¾ cup, packed) light or dark brown sugar
  • 340 g (1 ½ cups) pumpkin purée (homemade or canned)
  • 120 ml (½ cup) vegetable oil (or melted canola/coconut oil)
  • 60 ml (¼ cup) orange juice

Optional: 1 cup chocolate chips or chopped nuts


Instructions

  1. Position your oven rack in the lower third to ensure even baking. Preheat the oven to 350°F (175°C).

  2. Grease a metal loaf pan (9×5 inches or 10×4 inches) or line it with parchment paper for easy release.

  3. Sift the flour, baking soda, cinnamon, nutmeg, cloves, ginger, and salt into a large bowl.

  4. Whisk thoroughly so the spices are evenly distributed.

  5. In a separate bowl, whisk the eggs, granulated sugar, and brown sugar together until smooth and well combined.

  6. Add the pumpkin purée, vegetable oil, and orange juice, mixing until the batter is glossy and fluid. The mixture should be silky and well blended.

  7. Pour the wet ingredients over the dry mixture.

  8. Gently fold together with a spatula or wooden spoon, mixing only until you no longer see streaks of flour.
