Ingredients
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 onion, chopped
- 1 tbsp tomato paste
- 1 can diced tomatoes, drained (or about 500 g fresh tomatoes, seeded)
- 6 sun-dried tomatoes (preferably packed in oil)
- 1 chicken bouillon cube (or vegetable bouillon for a vegetarian version)
- 1 ½ to 2 cups water
- Fresh cream (optional, for garnish)
- Chopped basil (optional, a few leaves for garnish)
Instructions

Heat the olive oil in a saucepan over medium heat.

Add the minced garlic to the hot oil. Once it becomes fragrant, stir in the onions with a pinch of salt and the tomato paste. Sauté for about 3 minutes.

Add the diced tomatoes, sun-dried tomatoes, and the bouillon cube.

Pour in enough water to cover, bring to a boil, then reduce the heat and simmer covered for 10 minutes.

Let the soup cool slightly, then blend with a stand blender or immersion blender until smooth and creamy.

Season to taste with salt and freshly ground black pepper.

Serve hot, garnished with chopped basil and a swirl of cream, if desired.
