This creamy sweet potato mash with ginger is more than just a side dish—it’s a comforting, colorful centerpiece that fits both weeknight meals and festive occasions.


Ingredients

Scale
  • 3 medium sweet potatoes (peeled and cut into chunks)
  • 2 medium carrots
  • 1 teaspoon salt
  • 2 tablespoons maple syrup (or honey if you don’t have maple syrup)
  • 1 teaspoon ground ginger
  • ½ teaspoon ground coriander
  • Salt (to taste)
  • Black pepper (to taste)


Instructions

  1. Place the sweet potatoes and carrots in a saucepan, cover with water, and add salt.
  2. Cook until the vegetables are tender.
  3. Drain while keeping the cooking water aside.
  4. In a blender, puree the mixture, adding the reserved cooking water gradually until you reach the desired consistency.
  5. Stir in the maple syrup and spices, mixing well.
  6. For serving, line heart-shaped ramekins or special bavarois moulds with plastic wrap.
  7. Fill them with the mash, let it set, then carefully unmould.
  8. Decorate with a piping bag, drizzle with maple syrup, and sprinkle with freshly crushed black pepper.
