- 3 medium sweet potatoes (peeled and cut into chunks)
- 2 medium carrots
- 1 teaspoon salt
- 2 tablespoons maple syrup (or honey if you don’t have maple syrup)
- 1 teaspoon ground ginger
- ½ teaspoon ground coriander
- Salt (to taste)
- Black pepper (to taste)
Instructions
- Place the sweet potatoes and carrots in a saucepan, cover with water, and add salt.
- Cook until the vegetables are tender.
- Drain while keeping the cooking water aside.
- In a blender, puree the mixture, adding the reserved cooking water gradually until you reach the desired consistency.
- Stir in the maple syrup and spices, mixing well.
- For serving, line heart-shaped ramekins or special bavarois moulds with plastic wrap.
- Fill them with the mash, let it set, then carefully unmould.
- Decorate with a piping bag, drizzle with maple syrup, and sprinkle with freshly crushed black pepper.
