Description

This Chinese beef and onion stir-fry is a perfect weeknight dish, quick, flavorful, and made with simple ingredients you likely already have at home. Tender slices of beef are cooked with caramelized onions and a rich, savory sauce that tastes just like your favorite Chinese takeout, but healthier and faster.


Ingredients

  • 500 g (1.1 lb) tender beef (sirloin or filet)
  • 2 garlic cloves
  • 4 medium onions
  • 1 ½ tablespoons cornstarch
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons sesame oil
  • 4 tablespoons soy sauce
  • 1 teaspoon ground ginger
  • 3 tablespoons cooking oil
  • Salt and pepper


Instructions

  1. Cut the meat into very thin strips using a sharp knife. The thinner the slices, the faster they cook and the more tender they remain.
  2. In a large bowl, dissolve the cornstarch in a little cold water to avoid lumps. Then stir in the vinegar, soy sauce, sesame oil, and ginger.
  3. Add the beef strips to the bowl, mix well, and let them rest for at least 2 hours, overnight if possible for an even softer, more flavorful result.
  4. Heat the oil in a very hot wok. Stir-fry the beef for a few minutes until lightly browned. Remove it from the wok with its cooking juices and set aside.
  5. Slice the onions and sauté them in the same wok without cleaning it, so they absorb the remaining flavors. Add a little oil if needed and cook until soft and lightly caramelized.
  6. Stir in the degermed, crushed garlic and cook briefly to release its aroma.
  7. Return the beef and its sauce to the wok. Toss everything together and let it simmer for a few minutes so the flavors meld.
  8. Enjoy immediately with steamed rice or noodles.
