Description

Chicken Tikka Masala is an iconic Indian dish made with tender pieces of chicken (tikka) simmered in a creamy masala-spiced sauce, delivering a burst of rich, complex flavors.


Ingredients

  • 1 chicken, cut into pieces
  • 200 ml Greek yogurt
  • 1 tbsp tomato paste
  • 2-3 fresh tomatoes (or 1 can of chopped tomatoes)
  • 1 onion finely chopped
  • 1 garlic clove
  • 2 tbsp sliced almonds
  • Olive oil
  • Fresh coriander (cilantro)
  • 1 tbsp green curry powder
  • 1 tbsp ground cumin
  • 2 tsp sugar
  • Salt


Instructions

  1. In a large bowl, mix 100 ml Greek yogurt with half of the spices, the tomato paste, and 1 tsp sugar.
  2. Coat the chicken pieces well in this mixture and let them marinate.
  3. Heat the oil in a pan over medium-high heat.
  4. Drain the chicken from its marinade (reserve the marinade), then brown the pieces for about 5 minutes on each side until nicely grilled. Transfer to a plate and set aside.
  5. In the same pan, over medium heat, add 2 tablespoons of olive oil.
  6. Add the finely sliced onion and sauté for about 10 minutes, until soft and golden.
  7. Stir in the chopped garlic and cook briefly until fragrant.
  8. Add the chopped tomatoes, remaining spices, salt, and a small splash of water if needed. Cover and let simmer for 10 minutes.
  9. Stir in the reserved marinade and the ground almonds, then return the browned chicken to the pan. Simmer for another 10 minutes.
  10. Add the remaining yogurt to thicken the sauce, sprinkle in a generous tablespoon of chopped fresh coriander, and adjust seasoning if needed.
  11. Let cook uncovered over low heat for 5–10 minutes, until the sauce thickens.
  12. Serve the chicken tikka masala hot, ideally with saffron pilaf rice or fluffy basmati rice.
