Description
Chicken Tikka Masala is an iconic Indian dish made with tender pieces of chicken (tikka) simmered in a creamy masala-spiced sauce, delivering a burst of rich, complex flavors.

- 1 chicken, cut into pieces
- 200 ml Greek yogurt
- 1 tbsp tomato paste
- 2–3 fresh tomatoes (or 1 can of chopped tomatoes)
- 1 onion finely chopped
- 1 garlic clove
- 2 tbsp sliced almonds
- Olive oil
- Fresh coriander (cilantro)
- 1 tbsp green curry powder
- 1 tbsp ground cumin
- 2 tsp sugar
- Salt
Instructions
- In a large bowl, mix 100 ml Greek yogurt with half of the spices, the tomato paste, and 1 tsp sugar.
- Coat the chicken pieces well in this mixture and let them marinate.
- In a heavy pot over medium heat, sauté the peeled and finely chopped onion with a drizzle of olive oil and the remaining sugar for about 10 minutes, until golden.
- Add the chopped garlic clove, then stir in the chicken along with its marinade.
- Cook over medium heat for 20 minutes, turning the chicken pieces regularly.
- Add the sliced almonds, chopped tomatoes, the remaining spices, a pinch of salt, and a splash of water if needed. Cover and simmer for another 20 minutes.
- Stir in the second portion of Greek yogurt to bind the sauce, along with a generous spoonful of fresh coriander, and adjust seasoning with salt if necessary.
- Leave uncovered over low heat for 5–10 minutes to thicken the sauce.
- Serve the Chicken Tikka Masala hot, ideally with saffron pilaf rice or fluffy basmati rice.
