For a lighter colour, <strong>one coat is enough<\/strong>.<\/li>\n<\/ul>\n<h4><strong>Bake<\/strong><\/h4>\n<ul>\n<li id=\"instruction-step-10\">Preheat the oven to <strong>220\u00b0C (static heat)<\/strong>, or <strong>bottom heat<\/strong> (I find fan ovens can be tricky, so even with a modern electric oven, I prefer traditional baking).<\/li>\n<li id=\"instruction-step-11\">While the oven heats, score patterns on top with a sharp knife <strong>without cutting too deeply<\/strong> into the pastry.<\/li>\n<li id=\"instruction-step-12\">Make \u201cchimneys\u201d by poking <strong>5\u20136 holes<\/strong> with a toothpick so steam can escape.<\/li>\n<li id=\"instruction-step-13\">Bake the galette in the hot oven on <strong>the lowest rack<\/strong>, using <strong>bottom heat<\/strong>, for <strong>10 minutes<\/strong>.<\/li>\n<li id=\"instruction-step-14\">Lower the temperature to <strong>180\u00b0C<\/strong> and move the galette to <strong>the second rack<\/strong>, still using <strong>bottom heat<\/strong>, and bake for <strong>at least 30 minutes<\/strong>.
