Don\u2019t rinse it.<\/li>\n\n\n\n<li><strong>200 g mushrooms (button mushrooms, or chanterelles\/porcini\/mixed)<\/strong>\n<ul class=\"wp-block-list\">\n<li>Button mushrooms = mild and quick.<\/li>\n\n\n\n<li>Chanterelles\/porcini = deeper, \u201cwoodsy\u201d flavour.<\/li>\n\n\n\n<li>Brown them well so they don\u2019t steam.<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li><strong>1 garlic clove :&nbsp;<\/strong>Adds aroma without overpowering. Add after the onion to avoid burning.<\/li>\n\n\n\n<li><strong>1 large onion :&nbsp;<\/strong>Builds the base flavour and helps the risotto taste rich and rounded.<\/li>\n\n\n\n<li><strong>50 ml white vinegar :&nbsp;<\/strong>Stands in for wine by adding <strong>brightness<\/strong>.
