It only starts to take in juices <strong>once the surface begins to dry out<\/strong> later in cooking.<\/p>\n\n\n\n<p>\u2611\ufe0f Every time you <strong>open the oven door or lift the lid<\/strong>, the oven temperature drops and steam escapes. <strong>160\u00b0C<\/strong>.<\/p>\n\n\n\n<p><strong>**After 2 hours:<\/strong> increase the temperature to <strong>190\u00b0C<\/strong>.<\/p>\n<\/div><\/div>\n\n\n\n<p class=\"has-text-align-center\"><strong> <\/strong><\/p>\n\n\n\n<p>I removed the lid so the capon could turn a beautiful golden colour, and that\u2019s when I started <strong>basting it with the pan juices every 10 minutes<\/strong>.<\/p>\n\n\n\n<p><strong>&#8211; To brown the capon evenly once uncovered:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Place the capon <strong>breast-side down<\/strong> for a few minutes so it starts to colour.<\/li>\n\n\n\n<li>Then turn it onto its <strong>left side<\/strong>, then its <strong>right side<\/strong>.<\/li>\n\n\n\n<li>Finish <strong>on its back<\/strong> so the breast gets a lovely golden finish.<\/li>\n<\/ul>\n\n\n\n<p>&#8211; Once the capon is fully cooked:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Transfer it to a serving platter.<\/li>\n\n\n\n<li><strong>Cover loosely with foil<\/strong> and <strong>rest for at least 30 minutes<\/strong> before carving.<\/li>\n<\/ul>\n\n\n\n<p>&#8211; If you carve it straight away, the juices will run out and the meat will end up <strong>much drier<\/strong>.<\/p>\n\n\n\n<p>&#8211; Save some of the <strong>pan juices<\/strong> from the bottom of the roasting dish to spoon over class=\"wp-block-list\">\n<li>Keep the legs in place for <strong>even, controlled cooking<\/strong>.<\/li>\n\n\n\n<li>Help the capon stay <strong>tender and moist<\/strong>, so it doesn\u2019t dry out too much.<\/li>\n\n\n\n<li>Trap the cooking steam that would otherwise escape from the cavity and the legs, this helps the meat stay <strong>juicy<\/strong>.<\/li>\n<\/ul>\n\n\n\n<h2
